She is the owner of Mestizo Cocina de Origen, a restaurant in Mesitas del Colegio (Cundinamarca, Colombia), which promotes local ingredients, agroecology, and community development. In 2021, she was recognized as one of the most innovative producers by the 50 Next list from The World’s 50 Best, which highlights talents shaping the future of global gastronomy.
Álvaro Clavijo, with an impressive international cuisine background, founded El Chato in Bogotá, Colombia, in 2017. By 2024, it was ranked the 25th best restaurant in the world by The World’s 50 Best Restaurants. His cooking masterfully balances fire and the authentic flavors of his homeland, bringing diversity and elegance to every dish.
